To celebrate ANZAC Day here in Australia I have put up a recipe for some delicious Anzac Biscuits courtesy of Clean Eating Recipes!
Clean ANZAC Biscuits
1 Cup Organic Rye Flour
1 Cup Rolled Oats
1/2 Cup Shredded Coconut (or Desiccated Coconut)
1/2 cup Rapadura Sugar (or Coconut Sugar)
1/3 cup Organic Coconut Oil
3 x Tablespoons Organic Maple Syrup
1 x Tablespoon Water
1/2 teaspoon Aluminium Free Bicarb Soda
Sift the flour into a bowl. Add the Rapadura sugar, rolled oats and coconut.
Melt the coconut oil in a saucepan and add the maple syrup and water.
Stir the bicarbonate of soda into the liquid mixture. The mixture will foam up a little.
Add the liquid to the dry ingredients and mix thoroughly.
Place Tablespoon sized balls of mixture on a greased tray and bake at 180°C for 10-12 minutes.
Biscuits will harden when cool.
