Now I love breakfast time. I make time for breakfast because if I don’t I am like a dragon who will not rest until she eats! (family and friends have witnessed this happen).
Now as I am limited by some intolerances and preferences I have to get a little creative. This breakfast is my favourite ever and I was fortunate to enjoy it at a cute café in Maleny.
What you need:
Short cut bacon
Spinach or lettuce leaves
What to do:
Cook the bacon first. Set aside. Place the field mushrooms and tomato (cut in half, seed side facing down) into the frypan on a low/medium heat and place a lid over the top and cook. Wilt the spinach leaves right at the end ontop of the mushrooms or just place the lettuce on your plate and serve everything on top. Add salt to taste.
This was amazing and I even just made it for lunch today as I was searching for something special today.
