I’m so excited by this interview. Can I just say that I have really enjoyed showcasing the amazing talent of all the mums so far. Mums really are changing the world. Love it!
I am a Mother of 3 who is Holistic Wellness Coach. I have a background in Personal Training, and I am currently studying to be a Naturopath.
Although my life changed when my first baby was born 9 years ago, I feel my health journey really kicked in about 5 years ago when I got into Personal Training. It sparked something inside of me, and I really started to resonate with more natural ways of living, especially nutrition –Yoga and meditation became a huge part of my journey and I have slowly evolved to a diet of (mostly organic) wholefoods.
Being a Mum has changed my life and health dramatically. It’s a rather long story but you can read about it more on my website, but I went from a life of partying, drugs and drinking to a life where I was really starting to become more conscious about what my family was eating, and really trying to provide a good healthy diet for my kids. (although what I considered healthy back then, and what I consider healthy now, are two VERY different things!)
My dream for this year is to create a fully sustainable health coaching practice. This is all still in the very early stages but I hope to grow this substantially throughout the year.
Tuesday night dinner:
If I was totally exhausted a nice Homemade Chicken and Vegetable Soup is always a winner in my house. I like to have some of the stock already prepared and in my freezer so that all I need to do is defrost some stock and add the veg. There is so many vegies you can hide in this soup and the kids don’t even notice!!
1 Free Range (organic) whole Chook (I usually get the butcher to skin it for me so there is less fat)
2 Stalks of Celery
10 Whole Black Peppercorns
Garlic (I put in lots!)
1 whole Chilli
I also sometime add some swede or turnip into the stock
Put all of the ingredients into a large pot and bring to the boil. I let it simmer (high simmer) for about 2 hours until the chook is cooked. Skimming the top to begin with until all the “foam” is gone.
Remove the chicken and place in a bowl. Strain the stock and discard the celery etc and leave the stock to cool. (You can leave it in the fridge overnight if you want to get rid of the fat) This stock can then be frozen, or used straight away.
Pull all the meat away from the carcass and return to the stock ready to make the soup.
Meat from Chicken
(pretty much any veg you want to add!) Cabbage, Cauliflower, Capsicum, Potato – whatever you like.
Then just chop up veg, and add it all into the stock and cook until vegies are soft. I also sometimes add in some gluten-free pasta to make it a chicken noodle soup too.
