This nut balls recipe is the easiest snack I make. They are easy to make, easy to pack and easy to eat! I make at least 2 batches of these a week and I get real creative with them. I add any seeds I have or mix it with oats. So many combinations! If I have been listening to some inspiring words from people about a particular food I think I should add into my diet, I add it into my nut balls Super easy!
2 cups of nuts (any kind, all kinds, whatever you like!)
9 pitted dates (soak these so they are nice and juicy)
1/4 cup of shredded coconut
1/4 cup raw cacao powder
Some seeds (sunflower, chia, flax, pepitas, whatever you like)
2 tbsp coconut oil
In a food processor place all of your ingredients in (except for the dates for the moment). Blitz until they are all combined. Now turn it on low and slowly add in your dates. If it is a bit dry just add a bit of water (only a splash at a time!). Now roll it all into little balls. Voila!
So easy! So delicious. You can also add oats in with the nuts or instead of.
My son loves these and I also pack some in my bag when we go out for the morning.
