These tasty Zucchini boats are super easy to make for an afternoon tea or make the night before for lunch.
1 zucchini per person
Chopped cherry tomatoes
Torn fresh basil
Cut your zucchini in half length ways and place onto a grill tray. Grill upside down (skin up) for 5mins. Take it out of the grill and turn the zucchini back up. Add your torn basil and tomato (to taste) and then spread the grated cheese evenly over the top. Add salt and pepper to taste. Place under grill until cheese is melted. Enjoy!
